[..YouTube..] LAZYNESS! It isn’t expensive to use fresh lemons and sugar, especially working in a cocktail bar where you’ll be charging a high price anyway…If you use Orange juice you’re making an Amaretto Cooler…And yes this should be served over ice in a rocks glass with a cherry-orange flag garnish

This is not a fashion, since the total alcohol quantity in a drink has been fixed BY LAW in many countries. 6cl (2oz) is the total for a cocktail with more than one spirit.btw, barladies usually harder than this guy 😀

[..YouTube..] Sure, if you’re somewhere where you cant source fresh lemons then by all means use sour mix. But nothing beats fresh squeezed lemons in an amaretto sour. Also SHAKE IT LIKE IT OWES YOU MONEY!! lol — it should be a little frothy on top, some places use a little egg white to make it frothy. I also prefer it served in a short glass garnished with a orange slice. But that’s just presentation.

[..YouTube..] When are lemons and limes out of season? Bars already buy and stock lemons and limes for garnishes year round. Using pre-mixed and chemical laden sour mix and sweet and sour mixes is lazy, and gross.

[..YouTube..] @burleyque nope, you are wrong. Lemons and limes are more expensive when they are out of season. During the winter the prices go up, sometimes up to 3 times the spring/summer price. If you find cheap ones during that period, that means that they have preservatives and chemicals you can’t even imagine. Truth is that sour mixes most definitely have more in them then the “actual” lemons.

Come on, part of a bar’s duties is to be prepared to make real drinks and stuff. Before opening, but the limes and that’s it. When it comes the time to prepare the drink, you will use something to squeeze some pieces of lime together with the lugar, it will take extra 30 seconds from the bar tender, TOPS….

There is no problem at all in showing up 10-15 mins before your shift starts, which you have to do anyway to set up the bar and squeezing fresh lime and lemon juice into 2 separate bottles that you can use during the shift and make sure you top it up every 2 days or so.

[..YouTube..] @jtiano i have respect for you man, you seem to know what you’re doing. but everything comes down to preparations, you can have your sour mix done all by yourself from fresh fruits, fresh juice tastes much better, and there are special squeezers by witch you can squeeze a lemon or lime in just a second so you can make your sour mix when the drink is ordered. i prefer fresh squeezed juice, but as almost everything, it’s a matter of opinion

[..YouTube..] Drink recipes are interpretive. Pretty much what u see in this video, is what 99% of bars in the U.S. will give you, if you order an Amaretto Sour. My only fault with this demo, is not going long enough to show the garnish!

hmm…wonder how this would taste with some whiskey – amaretto whiskey sour? might try that tonight – this recipe sounds great – but I need something a little stronger if it’s to be worthwhile for me to drink 🙂
